Make Christmas placemats using old Christmas card fronts(I have plenty if you don't save yours) and pasting onto contact paper and laminating. You could of course put in a pretty picture of your kids in the center, maybe on Santa's knee or in front of a Christmas tree.

I'm sure you've done these already, but are you familiar with placemat bags?? Buy some placemats on sale, fold in half (inside out) and sew the sides together. Fold each of the bottom corners to make a flat triangle, and sew them. Turn the "bag" inside out, sew ribbon on top, and you have a cute bag. With Christmas coming up, you could have some really fun things to give gifts in :)
Also, if I mail you my recent zoo pictures, will you make them into a cute educational book for my child?? Just kidding :)
